Julie Knopp is a Co-Founder and Dietitian at CEDAR, leading integrative, evidence-based nutrition care for adolescents, young adults, and adults with eating disorders. As a Certified Eating Disorder Specialist Consultant (CEDS-C), she brings over 10 yrs of clinical experience and mentors dietitians pursuing their CEDS credential through IAEDP.
Julie is an expert in the dietitian’s role in Family-Based Treatment (FBT) and is passionate about fostering interdisciplinary collaboration. She leads research exploring the gut microbiome as a new frontier in eating disorder treatment, focusing on food-based interventions to ease GI distress, anxiety-related food aversions, and discomfort during nutritional rehabilitation. Her work reflects a strong commitment to improving recovery outcomes and patient comfort.
She holds dual Bachelor’s degrees in Nutrition and Dietetics and Mathematics Education from Radford University and completed her Dietetic Internship at Virginia Tech. Julie has worked across Partial Hospitalization (PHP), Intensive Outpatient (IOP), and University Student Health settings, providing nutrition counseling rooted in non-diet, weight-inclusive principles and medical nutrition therapy.
Certified as a Sports Nutritionist (CISSN) through the International Society of Sports Nutrition, she supports clients in optimizing performance and debunking nutrition myths with a body-positive approach.
Julie works with teens, families, and adults, delivering care grounded in FBT, Cognitive Behavioral Therapy for Eating Disorders (CBT-E), and specialized gut-healing consultations during nutritional rehabilitation and beyond.
